Hi everyone!
Today I would like to introduce to you one of my favourite dish: Vegetable Fried Rice. I have learned how to prepare it properly by my dear friend Jessica and I can’t stop to thank her for.
Equipment:
A wok or a dip large frying pan
Ingredients:
400 – 500 gr brown rice (I don’t like refined rice but you can use it if you want)
1 cup of chopped carrots
1 large chopped onion or leak (or both)
1 large piece of chopped white cabbage
2 crushed garlic cloves
1/2 tsp crushed ginger
1 or 2 red pepper (you can use also green or yellow peppers)
2 tbsp dark soya sauce
1 cup fronzen peas
vegetable oil as needed
sesame oil or olive oil to taste
curry and ground black pepper to taste
Method:
- Boil the rice with a small quantity of salt. When it is ready, drip it and cool it down with cold running water to stop the cooking. Let it stand in a bowl.
- Chop all the vegetables.
- Heat the wok well
- Add about 2-3 tbsp of vegetable oil into the wok. Pour it on the walls to oil the pan completely and not only its bottom
- Add the garlic and the ginger
- Add the diced onion and let cook for a minute
- Add the carrots, the pepper, the pies, and the white cabbage and stir well. Flavour with balck pepper
- Add the sesame oil or the olive oil to make the vegetables tastier.
- Add the soy sauce
- Add the rice and mix well so the rice can pick up all those flavours. At this moment the rice becomes darker. If you want it a bit darker just add one more tbsp of soy sauce.
- Taste the rice to know if it need a little more salt. If yes add some salt.
- Let it cook for about 5 minutes. Stir it sometimes.
- Add curry to taste and stir well
- Serve
This fried rice is absolutely amazing. It is really nice even the next day.

Oggi voglio presentarvi uno dei miei piatti preferiti: il riso fritto con verdure. Ho imparato a prepararlo correttamente grazie alla mia cara amica Jessica. Non smetterò mai di ringraziarla per questo.
Strumenti necessari:
1 wok o una padella abbastanza grande e alta.
Ingredienti:
400 – 500 gr di riso integrale ( a me non piace quello raffinato ma voi potete usarlo se volete)
1 tazza di carote tagliate a dadini (circa una o due, dipende dalla dimensione)
1 cipolla grande tagliata a fette o dadini o un porro ( o entrambi)
1 tazza di piselli congelati
1 bel pezzo di cavolo bianco (cavolo cappuccio)
1 o 2 peperoni rossi (potete usare anche quelli gialli o verdi. Io i verdi non li digerisco)
2 spicchi d’aglio tritati
1/2 cucchiaino di zenzero grattugiato
2 cucchiai di salsa di soia scura
1 cucchiaio di olio di sesamo o di oliva
olio di semi q.b.
sale, pepe e curry a piacere
Procedimento:
- Bollite il riso con un pizzico di sale. (non è necessario che il riso sia ben salato perchè poi aggiungerete la salsa di soia) Una volta che il riso è cotto scolatelo e raffreddatelo sotto l’acqua corrente per bloccarne la cottura.
- Tagliate a cubetti tutte le verdure
- Scaldate bene la wok
- Versate nella wok circa due o 3 cucchiai di olio di semi facendolo colare sulle pareti di modo che la padella sia tutta ben oliata e non solo il fondo.
- Aggiungete l’aglio e lo zenzero
- Aggiungete la cipolla e mescolate. Lasciate cuocere per circa 1 minuto
- Aggiungete la carota, il peperone, i piselli, il cavolo e insaporite con pepe nero.
- Aggiungete l’olio di sesamo o di oliva, mescolate e fate cuocere qualche minuto per insaporire meglio
- Aggiungete 1 cucchiaio di salsa di soia e fate insaporire
- Aggiungete il riso e mescolatelo bene in modo che prenda tutti i sapori degli altri ingredienti. A questo punto il riso cambia colore, diventa più scuso. Se però lo desiderate ancora più scuro aggiungete un altro cucchiaio di salsa di soia
- Assaggiate per vedere se va bene di sale. Se no, aggiungetene un po’
- Lasciate cucinare tutto per circa 5 minuti, mescolando di tanto in tanto.
- Insaporire con il curry e mescolare bene
- Servire
