Hello everyone!
Today I want to share with you this simple recipe. It is a family recipe and its taste remembers my the taste of my childhood. My mom prepared it using artichokes instead of courgettes but I don’t find any artichoke here in England and so I substituted them with cougettes. The result is simple but amazing. I hope you like it too!
Ingredients:
6 potatoes
2 courgettes
2 garlic cloves
2-3 tbsp extra virgin olive oil
about 400 ml water
salt to taste
a sprig of parsley
Method:
- Peel the potatoes and wash the courgettes and cut the ends. Cut both in pieces.
- Heat the oil in a saucepan and add the garlic. Let it cook two minutes then add the potatoes and the courgettes. Let it cook five minutes on medium heat, stirring sometimes.
- Add the water, flavour with salt and cover the saucepan with a lid.
- Let it cook until the potatoes are soft, stirring sometimes, then remove the lid and let it cook until the sauce thickens.
- Sprinkle with chopped fresh parsley.
- Enjoy!

Oggi voglio condividere con voi questa semplice ricetta, una ricetta di famiglia che mi ricorda la mia infanzia. Mia mamma la preparava usando i carciofi, ma non ho mai trovato i carciofi qui in Inghilterra perciò li ho sostituiti con le zucchine. Il risultato è semplice ma sorprendente. Spero piaccia anche a voi!
Ingredienti:
6 patate
2 zucchine
2 spicchi d’aglio
2-3 cucchiai di olio evo
circa 400 ml di acqua
sale q.b.
1 ciuffo di prezzemolo
Procedimento:
- Pelate le patate e lavate le zucchine privandole delle estremità. Tagliatele entrambe a pezzi.
- Scaldate l’olio in una pentola e aggiungete gli spicchi d’aglio. Lasciatelo rosolare due minuti e aggiungete patate e zucchine. Lasciate rosolare 5 minuti a fiamma media mescolando di tanto.
- Aggiungete l’acqua e salate. Coprite la pentola con il coperchio.
- Lasciate cuocere fino a che le patate non saranno ammorbidite, mescolando ogni tanto. Dopo di che togliete il coperchio e lasciate che il sughetto si addensi.
- Spolverate con del prezzemolo fresco tritato.
