Hello everyone!
Yesterday I made these muffins. They are gluten-free, sugar-free, egg-free and dairy-free, therefore Muffins-free. 😀
No, I am joking! Actually they are very, very nice. Â I used agave syrup to substitute the sugar and I added some pieces of apple and banana in the dough. With the leftover dough I also made some delicious pancakes. I hope you like it
Ingredients:
350 gr gluten free flour (mine is a mix of rice flour, potato starch, tapioca starch, maize flour an buckwheat flour. I buy it at Asda)
90 gr corn oil
about 250 ml water
agave syrup to taste (about 6-7 tbsp) or sugar (150 gr)
1 banana
3 apples
2 tbsp of baking powder
1 lemon zest
Method:
- Sift the flour in a bowl and add the oil and the lemon zest.
- Pour the water little by little,whisking with an electric whisk, until the dough is smooth and soft with no lumps.
- Add the agave syrup, taste to know how much do you need ( I add about 6-7 tbsp) and stir well.
- Sift the baking powder, whisking.
- Peel and slice 1 banana and 3 apples and add them into the dough leaving some slices apart to decorate the top of the muffins.
- Preheat the oven to 180° C
- Line the muffins cases with muffins paper or oil and dust them with flour.
- Fill the ramekin 2/3 full and put a slice of apple or banana on the top
- Bake for about 30 minutes or until the tooth pick come out clean
I have some leftover dough and I decide to make some pancakes.
Method:
- Oil a no stick pan and heat it on medium heat
- Pour 1 or 2 ladles of dough a time and wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown.
- Flavour them with some maple syrup and fresh fruit.

Ieri ho fatto questi muffins. Sono senza glutine, senza zucchero, senza uova e senza latte. Insomma senza muffins. 😀
No, sto scherzando. Sono molto, molto buoni in realtà . Ho usato lo sciroppo di agave al posto dello zucchero e ho aggiunto mele e banana all’impasto. Inoltre con l’impasto avanzato ho anche preparato dei buonissimi pancakes. Spero vi piaccia!
Ingredienti:
350gr gluten free flour ( la mia è un mix di farina di riso, fecola di patate, tapioca, farina di mais e di grano saraceno. L’ho comprata così all’Asda, in Inghilterra)
90 gr di olio di mais
circa 250 ml di acqua
scorza di un limone
sciroppo d’agave ( circa 6-7 cucchiai) o zucchero di canna ( circa 150 ml)
3 mele
1 banana
2 cucchiaini di lievito
Procedimento:
- Setacciare la farina in una ciotola e aggiungere l’olio e la scorza di limone
- Versare l’acqua poco per volta, mescolando con le fruste elettriche, finchè l’impasto non è liscio e morbido, privo di grumi
- Aggiungere lo sciroppo d’agave e assaggiare per sapere quando ve ne serve ( io ne ho aggiunto circa 6-7 cucchiai)
- Setacciare il lievito e mescolare bene
- Sbucciare e tagliare a fette le mele e la banana e aggiungere all’impasto, lasciando qualche pezzo da parte per decorare
- Preriscaldare il forno a 180°
- Rivestire i pirottini per muffin con della carta per muffin o oliateli e infarinateli.
- Riempire i pirottini per 2/3 e decorare la superficie con una fetta di mela o di banana
- Infornare per circa 30 minuti o fino a che la prova stecchino non sarà superata
Io ho usato l’impasto avanzato per preparare dei pancakes molto buoni.
Procedimento:
- Oliare e scaldare una padella antiaderente a fuoco medio
- Versare 1 o due mestoli di impasto per volta e aspettare che sulla superficie si formino delle bolle
- Girare attentamente il pancakes e far cuocere fino a che entrambe le superfici non saranno dorate
- Guarnire con sciroppo d’acero e frutta fresca.
