Hello everyone!
Today I want to share with you my recipe to prepare a delicious minestrone. What is a minestrone? Minestrone is a mixed vegetables soup. You can use all the vegetables you prefer.I prefer to use fresh vegetables instead of frozen ready vegetables because the flavour is totally different and much better. I like it very reach and I like change the ingredients sometimes. I hope you like it!
Ingredients:
2 tbsp extra virgin olive oil
1 onion
3 potatoes
2 carrots
1 piece of white cabbage
1 or 2 stalk of celery
1 sweet potato
1 piece of swede
1 beans can ( I usually use borlotti beans)
1 can of chopped tomatoes
1 or 2 courgettes
about 1,5 litre of water
salt to taste
some leaves of rosemary, basil and parsley
black pepper to taste
1 small red chilli pepper
optional: pasta or rice or spelt as needed
Method:
I usually use a pressure cooker because in this way it cooks faster and I think that its flavour is more tasty, but you can use a normal sauce pan.
- Prepare all the vegetables, washing and chopping them in pieces.
- Heat the oil in a large sauce pan and then add the chopped onion. Let it cook until golden brown, stirring sometimes
- Add all the other vegetables and the beans (wash and drip them before) . Lower the heat and let it cook for five minutes, stirring sometimes
- Pour the water and add the chopped tomatoes. Flavour with salt and black peppers. Add herbs and the chilli pepper.
- If you use a pressure cooker you’ll close the lid and wait it reach the pressure ( It will start to whistle), after that you’ll let it cook for about 25 minutes . If you use a normal sauce pan you’ll put the lid and let it cook until the potatoes are soft, stirring sometimes.
- Boil apart some salted water and cook the pasta or the rice to add then to the minestrone.

Oggi voglio condividere con voi la ricetta del mio minestrone. Io lo preferisco bello ricco e fatto con verdure fresche, perchè il sapore è tutta un’altra cosa e decisamente migliore. Mi piace anche variare le verdure che utilizzo e avere un minestrone ogni volta differente. Spero che vi piaccia!
Ingredienti:
2 cucchiai di olio evo
1 cipolla
3 patate
1 patata dolce
2 carote
un pezzo di cavolo bianco
un pezzo di cavolo navone
2 gambi di sedano
1 o 2 zucchine
1 barattolo di fagioli ( Io preferisco borlotti)
1 barattolo di pomodori in pezzi
circa 1,5 l di acqua
sale q.b.
Pepe nero q.b.
1 peperoncino piccolo
qualche foglia di rosmarino, basilico e prezzemolo
optional: pasta, riso o farro.
Procedimento:
Solitamente io utilizzo la pentola pressione per la preparazione del minostrone perchè in questo modo la cottura è più veloce e io penso che i sapori rimangano più forti e decisi, però potete ovviamente utilizzare una pentola normale.
- Preparare le verdure, lavandole e tagliandole a pezzi
- In una pentola capiente fate scaldare l’olio e aggiungete la cipolla tritata. Fate cuocere fino a che non inizia a dorare, mescolando di tanto in tanto
- Aggiungete tutte le verdure e i fagioli ( dopo averli sciacquati e scolati ). Abbassate la fiamma e lasciare rosolare 5 minuti mescolando di tanto in tanto.
- Aggiungete l’acqua e i pomodori a pezzi. Insaporite con sale e pepe e aggiungete le erbe aromatiche e il peperoncino
- Se usate la pentola a pressione a questo punto dovete mettere il coperchio, aspettare che raggiunga la pressione ( inizierà a sfiatare ) e lasciar cuocere per altri 25 minuti. Se invece utilizzate una pentola normale vi suggerisco di mettere sempre un coperchio e di lasciar cuocere fino a che le patate non saranno morbide, mescolando di tanto in tanto.
- Fate bollire a parte dell’acqua salata per cuocere la pasta o il riso da aggiungere poi al vostro minestrone.

My son doesn’t like to eat big pieces of vegetable and he prefers blended minestrone.
A mio figlio non piace mangiare le verdure a pezzi ma preferisce che il suo minestrone venga passato.
