Today I want to share with you this amazing recipe. As someone knows 8 months ago I turned vegan and I stopped eating any animal product. I have never regretted my choice but I admit that sometimes I miss the flavour of the sea. So, yesterday I wanted to try another way to prepare vegan reefs pasta with runaway seafood. 😀 I hope you like it!
Ingredients:
350 gr spaghetti
1/2 tsp dried wakame seaweed
2 garlic cloves
6-7 baby plum tomatoes
1/2 tin of chopped tomatoes
1 sprig of parsley
2 tbsp extra virgin olive oil
optional: some tbsp of silken tofu
salt to taste
black pepper to tast
ground almond to taste
cayenne pepper to taste
Method:
- Rehydrate the wakame with water.
- Heat the oil in a frying pan and add the garlic cloves. Let it cook on low heat until golden brown.
- Add the halved baby plum tomatoes, the silken tofu, cutted in pieces, and the wakame. Saute 2 minutes.
- Add the chopped tomatoes and stir well. Flavour with salt and cayenne pepper and let it cook on low heat for 8-10 minutes. Then turn off the heat .
- Boil spaghetti and drip them, leaving aside some cooking water and in the meantime chop almonds very thin and add a pinch of salt and a pinch of black pepper.
- Add spaghetti into the pan and turn on the heat. Flavour with chopped parsley and stir to season well.
- Serve and sprinkle with almonds.

Oggi voglio condividere con voi questa ricetta sorprendente. Come qualcuno di voi sa, 8 mesi fa sono diventata vegana e ho smesso di mangiare qualsiasi derivato animale. Non mi sono mai pentita della mia scelta anche se confesso che ogni tanto mi è mancato il sapore del mare. Così ho pensato a un altro modo per preparare gli spaghetti allo scoglio ma con le cozze scappate 😀 . Spero vi piaccia!
Ingredienti:
350 gr di spaghetti
1/2 cucchiaino di aghe wakame disidratate
6-7 pomodorini datterini
2 spicchi d’aglio
2 cucchiai di olio evo
1/2 barattolo di pomodori pelati in pezzi
optional: qualche cucchiaio di silken tofu
1 ciuffo di prezzemolo
sale q.b.
mandorle tritate q.b.
pepe nero q.b.
peperoncino q.b.
Procedimento:
- Reidratate le alghe in un po’ d’acqua
- Scaldate l’olio in padella e aggiungete gli spicchi d’aglio. Fateli rosolare a fiamma bassa fino a che non iniziano a dorare.
- Aggiungete i pomodorini tagliati a metà , il silken tofu a pezzettini e le alghe. Fate saltare due minuti.
- Aggiungete i pelati in pezzi e insaporite con sale e peperoncino. Fate cuocere a fiamma bassa per 8-10 minuti. Dopo di che spegnete la fiamma
- Bollite gli spaghetti e scolateli lasciando da parte un po’ di acqua di cottura, nel frattempo tritate le mandorle fini fini e aggiungete un pizzico di sale e uno di pepe nero.
- Mettete li spaghetti dentro la padella. Riaccendete il fuoco e mescolate bene per condirli. Insaporite con un po’ di prezzemolo tritato
- Servite e spolverate con le mandorle tritate in precedenza.
