As promised I come back with my Vegan Ragù recipe.
I’ll explain two ways to have a delicious vegan Ragù. You can prepare it using Borlotti beans balls , or Lentils Burger, or ready vegan sausages (I use the vegan sausages by Linda McCartney) or with red lentils.
Method 1: Ragù made with Borlotti beans balls or Lentils Burger
Ingredients:
4-5 Borlotti beans balls or 2-3 Lentils Burger or 2 frozen vegan sausage
1/2 onion
1 carrot
1 celery stalk
1 glass of white wine
1 tin of chopped tomato sauce
2 tbsp olive oil
1 glass of water
some leaves of basil
salt to taste
black pepper to taste
- Prepare and cook the balls or the burger or defrost the vegan sausage
- Chop the onion, the carrot and the celery
- Heat oil in a large heavy pot over medium-high heat. Add onions, celery, and carrots. Sauté until soft.
- Chop the balls or the burgers in small pieces
- Add them into the pot. Lower the heat and Sautè for about 3 minutes mixing with a spoon frequently
- Add the wine and continue mixing for about 8 minutes.
- Pour the chopped tomatoes and the water and flavour with salt, basil and black pepper.
- Cover with the lid and stir occasionally.
- Let it cook for about 15-20 minutes. Taste it!
Method 2: Ragù made with red lentils
Ingredients
200 gr red lentils
1 rosemary sprig
1/2 onion
1 carrot
1 celery stalk
1 glass of white wine
1 celery stalk
1 tin of chopped tomato sauce
2 tbsp olive oil
1 glass of water
some leaves of basil
salt to taste
black pepper to taste
- Boil the lentils adding the rosemary sprig and a pinch of salt. Let them cook until soft
- Chop the onion, the carrot and the celery
- Heat oil in a pot over medium-high heat. Add onions, celery, and carrots. Sauté until soft.
- Drip the lentils and add them into the pot. Lower the heat and Sautè for about 3 minutes mixing with a spoon frequently
- Add the wine and continue mixing for about 8 minutes.
- Pour the chopped tomatoes and the water into the pot and flavour with salt, basil and black pepper.
- Cover with the lid and stir occasionally.
- Let it cook for about 15-20 minutes. Taste it!
- If you don’t like whole lentils you’ll grind the sauce or a part of it with an immersion blender
You can use the Vegù to season pasta or to prepare a delicious lasagna or cannelloni or even a Vegan Aubergine Parmesan.

Come promesso sono tornata con la mia ricetta del ragù vegan.
Vi spiegherò due modi per preparare un delizioso ragù. Potrete infatti usare delle polpette di fagioli borlotti o dei burger di lenticchie o delle salsicce vegan surgelate (qui in Inghilterra io uso la linea vegan di Linda McCartney) o ancora delle lenticchie rosse.
Metodo 1: Ragù fatto con le polpette di fagioli o con i burger di lenticchi o con le salsicce vegan surgelate
Ingredienti:
4-5 polpette di fagioli o 2-3 burger di lenticchi o 2 salsicce vegan surgelate
1/2 cipolla
1 carota
1 gambo di sedano
1 bicchiere di vino bianco
1 barattolo di pomodori pelati a pezzi
2 cucchiai di olio di oliva
1 bicchiere di acqua
qualche foglia di basilico
sale q.b.
pepe nero q.b.
- Preparare e cuocere le polpette di fagioli o i burger di lenticchie o scongelare le salsicce vegan
- Tritare a dadini la cipolla, la carota e il sedano
- Scaldare l’olio in una pentola a fiamma alta-moderata. Aggiungere la cipolla, la carota e il sedano e rosolare finchè non si ammorbidiscono
- Tagliare le polpette o i burger o la salsiccia vegan in piccoli pezzi
- Aggiungerle agli altri ingredienti. Abbassare la fiamma e rosolare per circa 3 minuti mescolando frequentemente con un mestolo a cucchiaio
- Aggiungere il vino e continuare a cuocere mescolando di tanto in tanto per circa 8 minuti
- Versare i pelati in pezzi e il bicchiere d’acqua e insaporire con sale pepe e basilico
- Coprire con un coperchio e mescolare di tanto in tanto
- Lasciar cuocere per 15-20 minuti. Assaggiare!
Method 2: Ragù fatto con le lenticchie rosse
Ingredienti:
200 gr di lenticchie rosse
1 rametto di rosmarino
1/2 cipolla
1 carota
1 gambo di sedano
1 bicchiere di vino bianco
1 barattolo di pomodori pelati a pezzi
2 cucchiai di olio di oliva
1 bicchiere di acqua
qualche foglia di basilico
sale q.b.
pepe nero q.b.
- Bollire le lenticchie con un rametto di rosmarino e una presa di sale. Far cuocere finchè non si ammorbidiscono
- Tritare a dadini la cipolla, la carota e il sedano
- Scaldare l’olio in una pentola a fiamma alta-moderata. Aggiungere la cipolla, la carota e il sedano e rosolare finchè non si ammorbidiscono
- Scolare le lenticchie e aggiungerle al soffritto
- Abbassare la fiamma e rosolare per circa 3 minuti mescolando frequentemente con un mestolo a cucchiaio
- Aggiungere il vino e continuare a cuocere mescolando di tanto in tanto per circa 8 minuti
- Versare i pelati in pezzi e il bicchiere d’acqua e insaporire con sale pepe e basilico
- Coprire con un coperchio e mescolare di tanto in tanto
- Lasciar cuocere per 15-20 minuti. Assaggiare!
- Se non vi piacciono le lenticchie intere potrete titare il ragù con un frullatore a immersione
Potrete usare il Vegù per condire la pasta o preparare delle deliziose lasagne o cannelloni o ancora delle melanzane alla parmigiana vegan.
