Today I want to share with you this funny recipe to prepare mini vegetable sunflower pastries. I hope you like it!
Ingredients for 10 sunflowers
for the pastry:
200 gr flour
50 gr corn or sunflower oil
about 70 ml water
1 pinch of salt
for spinach sunflowers:
40 gr spinach
a handful cashews
1 sprig of parsley
salt to taste
1/4 cup of water
for bell pepper sunflowers:
1 red bell pepper
1 small onion
1 tbsp extra virgin olive oil
a handful of cashew
salt to taste
for broccoli sunflowers:
about 50 gr broccoli
1 boiled potato
1 garlic clove
1 tbsp extra virgin olive oil
salt and smoked paprika to taste
plant milk + turmeric for glazing
Method:
- Soak the cashews in water for at least 2 hours then drain them.
- Prepare the pastry: Sift the flour in a bowl and add the oil and the salt. Stir a bit. Pour the water, little by little, kneading well with your hands until the dough is smooth and consistent. Let it stand 25 minutes.
- Prepare the fillings.
- Put the spinach in a pan with the water and a pinch of salt and let it cook for 2-3 minutes. Put them in a food processor with a handful of cashew and a sprig of parsley and blend well until the mixture is soft and creamy. Put it aside.
- Heat the oil in a pan and add the sliced onion and bell pepper. Flavour with a pinch of salt and let it cook, to low-medium heat until soft. Put it in a food processor with a handful of cashew and blend well until the mixture is soft and creamy. Put it aside.
- Boil a potato and in the meantime cut the broccoli in small pieces. Heat the oil in a pan, add the garlic clove and then the broccoli. Flavour with a pinch of salt and smoked paprika. Let it cook until soft on low-medium heat. When the potato is cooked, peel it and put in a food processor with broccoli and garlic. Blend well until the mixture is soft and creamy. Put it aside.
- Preheat the oven to 180°C
- Prepare the sunflower pastries: roll out the dough on a floured surface to 1-2 mm thick. Cut it in circles using a 10 cm diameter cutter. Fill a pastry bag with one of the fillings (you’ll use the other fillings later). Place about 1 tsp of filling in the centre of a circle and about 1 tbsp all around, near the edges ( I’ll show you a picture (1) ). Cover with a second circle of dough. Press with your fingers near the centre to close the dough, then press well all the edges.(2) Now protect the centre with a small coffee cup and engrave the edges in regular wedges using a sharp knife. (3)Twist each segment to form the sunflower petals so that the filling is visible. (4) Continue until you make all the sunflowers.
- Mix a pinch of turmeric with a bit of plant milk then brush the centre of the flowers with this mixture (5) . Sprinkle some poppy seed if you want.
- Place the sunflowers on a baking tray lined with no stick baking paper and cook them in the oven for about 20-25 minutes or until they are golden brown.
- Enjoy!

Oggi voglio condividere con voi questa divertente ricetta per preparare delle piccole tortine girasole con ripieno di verdure. Spero vi piacciano!
Ingredienti per 10 girasoli
per la pasta:
200 gr farina
50 gr olio di semi di girasole o mais
circa 70 ml di acqua
1 pizzico di sale
per il ripieno agli spinaci:
40 gr spinaci
un pugno di anacardi
1 ciuffo di prezzemolo
sale q.b.
circa 50 ml di acqua
per il ripieno al peperone:
1 peperone rosso
1 cipolla piccola
1 cucchiaio di olio evo
1 pugno di anacardi
sale q.b.
per il ripieno ai broccoli:
circa 50 gr broccoli
1 patata bollita
1 spicchio d’aglio
1 cucchiaio di olio evo
sale e paprika affumicata q.b.
Procedimento:
- Mettere in ammollo gli anacardi per almeno 2 ore, dopo di che scolateli.
- Preparate l’impasto: Setacciate la farina in una ciotola, aggiungete l’olio e il sale. Mescolate un pochino. Versate l’acqua, poco per volta, e impastate bene con le mani fino a che non avrete un panetto soffice e compatto. Lasciate riposare 25 minuti.
- Preparate i ripieni.
- Mettete gli spinaci in una padella con dell’acqua e un pizzico di sale e fateli cuocere 2-3 minuti. Metteteli in un robot da cucina insieme agli anacardi e al prezzemolo e tritate tutto fino ad avere un composto cremoso e liscio. Mettete da parte.
- Scaldate l’olio in una padella e aggiungete la cipolla e il peperone tagliati a pezzi. Insaporite con un pizzico di sale e fate cuocere a fiamma medio-bassa fino a che non saranno teneri. Metteteli in un robot da cucina insieme agli anacardi e tritate bene fino ad avere un composto soffice e cremoso. Mettete da parte pure questo.
- Bollite la patata e nel frattempo tagliate i broccoli a pezzetti. Scaldate l’olio in padella e aggiungete l’aglio e dopo i broccoli. Insaporite con un pizzico di sale e di paprika affumicata. Lasciate cuocere fino a che si saranno ammorbiditi. Quando la patata sarà pronta mettetela insieme a broccoli e aglio in un robot da cucina e frullate tutto fino ad avere un composto cremoso e soffice. Mettete da parte anche questo.
- Preriscaldate il forno a 180°C
- Preparate le tortine girasole: Stendete l’impasto su una superficie infarinata fino ad ottenere uno spessore di 1-2 mm. Ora tagliate dei cerchi utilizzando una formina di 10 cm di diametro. Riempite una sacca da pasticcere con uno dei ripieni ( userete anche gli altri due ripieni in seguito) e spremete circa un cucchiaino di ripieno al centro di un cerchio,poi create un cerchio di ripieno tutto intorno, vicino ai bordi ( vi mostrerò una foto (1) ). Coprite con un secondo cerchio e pressate con le dita l’impasto situato tra i due ripieni. Pressate anche lungo i bordi per sigillarli.(2) Ora proteggete il centro coprendolo con una tazzina da caffè e incidete il cerchio in tanti spicchi uguali, (3) usando un coltello affilato. Girate ogni spicchio per fare in modo che si veda il ripieno. (4) Continuate fino a che avrete assemblato tutti i girasoli.
- Mescolate un pizzico di curcuma con del latte vegetale e spennellate il tutto sul centro del fiore. (5)Spolverate con semi di papavero se volete.
- Posizionate i girasoli su una teglia rivestita da carta forno antiaderente e infornateli per circa 20-25 minuti o fino a che saranno dorati.
