Hello everyone!
Today I want to share with you a delicious recipe to prepare vegan spinach & soya ricotta cannelloni. I hope you like it!
Ingredients:
no eggs cannelloni as needed (it depends on the size of you tray)
250 gr soya ricotta (click here for the recipe)
200 gr spinaches
1 handful ground almonds
salt to taste
1 sprig of parsley
1 tbsp extra virgin olive oil
nutmeg to taste
black pepper to taste
For the white sauce:
600 ml unsweetened soy milk
4 tbsp flour
4 tbsp extra virgin olive oil
nutmeg to taste
salt to taste
black pepper to taste
Method:
- Prepare the ricotta the day before (here the recipe)
- Boil the spinaches in salted water for 2 minutes then drain and chop the in a food processor.
- Place the ricotta in a bowl, add spinaches, chopped parsley, nutmeg, black pepper and on tbsp of olive oil. Stir well and let it stand in the fridge.
- Prepare the white sauce: Sift the flour in a saucepan, add the oil and whisk a bit. Let it cook on low heat until darker and turn off the heat. Pour the milk, little by little, whisking well to avoid lumps, turn on the heat again and flavour with salt, nutmeg and black pepper. Let it cook, stirring continuously until start to thicken. Let it cool.
- Preheat the oven to 180°C
- Take a baking tray (I used a square baking tray 24×24 cm) and pour the white sauce on the bottom. Using a piping bag or plastic food bag with the corner snipped off, squeeze the ricotta filling into the cannelloni tubes. Lay the tubes, side by side, covering all the surface and pour other white sauce on them. Sprinkle with ground almonds.
- Let it cook for about 25 minutes or until cooked (pierce the surface with a fork to be sure). Let it cool a bit and serve.

Oggi vi presento la ricetta per preparare degli ottimi cannelloni di ricotta di soia e spinaci. Spero vi piacciano!
Ingredienti:
cannelloni senza uova (la quantità dipende dalle dimensioni della teglia)
250 gr di ricotta di soia (qui la ricetta)
200 gr di spinaci
1 cucchiaio di olio evo
sale q.b.
noce moscata q.b.
pepe nero q.b.
mandorle tritate q.b.
1 ciuffo di prezzemolo
Per la besciamella:
600 ml di latte di soia non zuccherato
4 cucchiai di farina
4 cucchiai di olio evo
sale q.b.
pepe nero q.b.
noce moscata q.b.
Procedimento:
- Preparate la ricotta il giorno prima (qui la ricetta)
- Lessate 2 minuti gli spinaci in acqua salata, scolateli bene e tritateli.
- Mettete la ricotta in una ciotola e aggiungete gli spinaci, il prezzemolo tritato, 1 cucchiaio di olio, noce moscata e pepe. Mescolate bene e fate riposare in frigo.
- Preparate la besciamella: setacciate la farina in un pentolino, aggiungete l’olio, mescolate bene e fate imbiondire a fiamma bassa. Spegnete il fuoco e versate il latte di soia a filo mescolando bene con una frusta per non formare grumi. Rimettete il pentolino sul fuoco e insaporite con sale, pepe nero e noce moscata. Lasciate cuocere, mescolando continuamente fino a che non inizierà ad addensarsi. Spegnete e lasciate raffreddare.
- Preriscaldate il forno a 180°
- Prendete una teglia (io ne ho usato una 24×24 cm) versate uno strato di besciamella sul fondo. Riempite i cannelloni col ripieno di ricotta, aiutandovi con una sacca da pasticcere magari e disponeteli uno accanto all’altro, sul fondo, ricoprendo tutta la superficie della teglia. Aggiungete altra besciamella e spolverate con le mandorle tritate in superficie.
- Infornate per circa 25 minuti o fino a che la pasta non sarà cotta ( bucherellatela con una forchetta per esserne sicuri). Lasciate raffreddare un po’ prima di servire.
