Hello everyone!
This is one of the most popular Mauritian desserts.
Initially I wasn’t very sure that I liked it, the consistency of warm smashed bananas was a bit strange. Then, when it cooled completely, I thought it was very very good and my men thought the same. I hope you like it!
Ingredients for a 24 cm diameter tart pan
For short crust pastry:
190 gr flour (about 1 1/2 cup)
80 gr vegan fat spread (about 1/3 cup)
about 1/4 cup of warm water
1 small pinch of salt
If you want you can substitute fat spread with oil (click here for the recipe and substitute olive oil with corn or sunflower oil )
for the filling:
5 big ripe bananas
6 tbsp cane sugar
2 tbsp vanilla extract
about 1/3 cup of water
plant milk for glazing
Method:
- Sift the flour in a bowl and add the vegan fat spread, start to knead with your hands until it resembles crumbs. Add the pinch of salt and pour the water, little by little, kneading well until dough is smooth and consistent. Let it stand 20 minutes.
- In the meantime peel the bananas and slice them. Put the banana slices in a sauce pan and smash them using a masher.(1) Add the sugar and the vanilla extract. Mix with a spoon
- Let it cook on low- medium heat, stirring often. Add some water and let it cook until it thickens.( about 10 minutes) Let it cool. (2)
- Roll out 2/3 of the dough on a lightly floured surface until 2-3 mm thick and line the tart pan. Pierce the bottom with a fork, sprinkle a bit of cane sugar and cut the excess from the edges. (3)
- Spoon the cooled filling into the pastry case and smooth the top. (4)
- Roll out the remaining pastry and cut it into thin stripes. Form lattice pattern with pastry strips over the top of filling and brush the tops with some plant milk.(5)
- Bake in preheated oven to 180°C (350°F) for about 25-30 minutes or until golden brown.

Questo è uno dei dolci più popolari delle Mauritius.
Inizialmente non ero sicura che mi piacesse, la consistenza delle banane schiacciate e calde era un pochino strana. Dopo, una volta fredda, ho pensato che invece fosse molto buona e lo stesso hanno pensato i miei uomini. Spero vi piaccia!
Ingredienti per una teglia da crostata di 24 cm di diametro:
Per la pasta briseè:
190 gr di farina
80 gr margarina vegan
circa 50 ml di acqua calda
1 pizzichino di sale
Se volete potete preparare la briseé con olio anzichè con margarina (cliccate qui per la ricetta e sostituite l’olio evo con olio di mais o girasole)
per il ripieno:
5 banane grandi e mature
6 cucchiai di zucchero di canna
2 cucchiai di estratto di vaniglia
circa 80 ml di acqua
un po’ di latte vegetale per la doratura
Procedimento:
- Setacciate la farina in una ciotola e aggiungete la margarina, iniziate a mescolare con le mani fino a che non diventa un composto un po’ sbricioloso. Aggiungete il pizzico di sale e versate l’acqua, poco per volta, impastando bene con le mani fino a che otterrete un panetto liscio e compatto. Fate riposare 20 minuti.
- Nel frattempo sbucciate le banane, tagliatele a fettine e mettetele in un pentolino. Schiacciatele con uno schiacciapatate e aggiungete lo zucchero e la vaniglia (1). Mescolate con un cucchiaio.
- Lasciate cuocere a fiamma medio bassa, mescolando spesso. Aggiungete un po’ di acqua e lasciate cuocere fino a che non si addensa (2) ( circa 10 minuti). Lasciate raffreddare.
- Su una superficie leggermente infarinata stendete i 2/3 dell’impasto fino ad avere uno spessore di 2-3 mm. Posizionatelo all’interno della teglia per crostata, bucherellate il fondo con una forchetta spolverateci sopra un pochino di zucchero. (3) Tagliate gli eccessi dai lati.
- Ora versate dentro la crema alla banana, spalmandola bene e livellando la superficie. (4)
- Stendete l’impasto rimanente e tagliatelo a striscioline, usatele per formare una griglia e spennellate con un po’ di latte vegetale. (5)
- Infornate in forno preriscaldato a 180°C per circa 25-30 minuti o fino a che la superficie non sarà dorata.
