Hello everyone!
Some days ago I made this colourful cheesecake. I hope you like it!
Ingredients:
300 gr rich tea biscuits (without palm oil)
9 tbsp corn oil
340 gr silken tofu
200 gr cashews
1 lemon juice
8 tbsp agave syrup
1 tbsp vanilla extract
2 tbsp dried grated coconut
4 strawberries
1 handful blueberries
12 gr agar agar + 120 ml water
some strawberries and blueberries for decoration.
Method:
- Soak the cashew in water for one night
- Preheat the oven to 180°C
- Crush the biscuits to crumbs ( I put them in a food processor) and mix them with the oil.
- Line the base of a 20 cm diameter springform cake pan with the mixture (1) and bake for about 6-8 minutes.
- Drip the cashews and put them in a food processor with silken tofu, agave syrup, lemon juice, coconut and vanilla extract. Blend well until the mixture is creamy and homogeneous. (2)
- Share the mixture in 3 parts and blend 1 part with strawberries (3) and 1 part with blueberries (4). Left the third part as it is white and coconut flavoured. (5)
- Boil 120 ml of water and add the agar agar. Mix well and let it boil 2 minutes. Share the jelly in 3 parts and add one part in the strawberry mixture, one part in coconut mixture and one part in blueberry mixture. Mix well.
- Pour the coconut mixture in the pan, on the biscuits and flatten the cream. Add the strawberry cream and flatten again. Add the blueberry cream on the top.
- Decorate with strawberries and blueberries (6)and let it cool in the fridge one night.
- Enjoy!

Qualche giorno fa ho preparato questa colorata cheesecake. Spero vi piaccia!
Ingredienti:
300 gr di biscotti vegan (senza olio di palma)
9 cucchiai di olio di mais
200 gr di anacardi
340 gr di silken tofu (tofu seta)
succo di 1 limone
8 cucchiai di sciroppo d’agave
1 cucchiaio di estratto di vaniglia
2 cucchiai di cocco disidratato in scaglie
4 fragole
1 pugno di mirtilli
12 gr di agar agar + 120 ml di acqua
fragole e mirtilli per decorare.
Procedimento:
- Mettete gli anacardi in ammollo per una notte.
- Preriscaldate il forno a 180°C
- Sbriciolate i biscotti ( io ho usato un robot da cucina) e uniteli all’olio.
- Rivestite il fondo di una teglia a cerniera da 20 cm di diametro (1) e infornate per 6-8 minuti.
- Scolate gli anacardi e metteteli in un robot da cucina insieme al silken tofu, lo sciroppo d’agave, il succo di limone, il cocco e l’estratto di vaniglia. Frullate bene finchè non ottenete un composto cremoso e omogeneo. (2)
- Dividete il composto in 3 parti: frullate una parte con le fragole (3), una parte con i mirtilli (4) e lasciate la terza parte così com’è, bianca e al sapore di cocco. (5)
- Fate bollire 120 ml di acqua e aggiungete l’agar agar. Lasciate bollire 2 minuti e dividete la gelatina in 3 parti. Aggiungetene una alla crema alla fragola, una parte a quella al mirtillo e una parte alla crema al cocco. Mescolate benissimo.
- Versate la crema al cocco nella teglia, sopra i biscotti, livellate e aggiungete la crema alla fragola. Livellate di nuovo e aggiungete la crema ai mirtilli.
- Decorate la superficie con fragole e mirtilli. (6) Fate raffreddare in frigo una notte.
- Buon appetito!
