Hello everyone! Today I want to share with you this delicious recipe.
I used fregola that is a type of pasta from Sardinia, my island, (click here to know more about) but you can use also brown rice. I hope you like it!
Ingredients:
300 gr fregola or brown rice
6 portobello mushrooms
4-5 asparagus
1 tbsp dried porcini mushrooms
2 garlic cloves
2 tbsp extra virgin olive oil
1 tsp dried wakame seaweed
salt to taste
black pepper to taste.
a sprig of parsley
Method:
- Rehydrate porcini mushrooms in hot water and wakame in cool water.
- Heat the oil in a frying and add the garlic. Let it golden brown.
- Add the sliced portobello mushrooms and asparagus. Flavour with salt and sautè 3 minutes.
- Drip porcini and wakame and add them into the pan..
- Let it cook on medium heat until the mushrooms and the asparagus are cooked, stirring sometimes, then turn off the heat.
- Boil the fregola (or the rice) in salted water then drip it leaving aside some cooking water.
- Add fregola and cooking water into the pan, turn on the heat and stir well. Sautè 3 minutes.
- Season with a sprinkle of chopped parsley and a pinch of black pepper.
- Enjoy!

Oggi voglio condividere con voi questa deliziosa ricetta.
Io ho utilizzato la fregola, un tipo di pasta tipico della Sardegna, la mia regione ( cliccate qui per saperne di più) ma voi potete sostituirla con del riso integrale. Spero vi piaccia!
Ingredienti:
300 gr di fregola (o riso integrale)
6 funghi portobello
4-5 asparagi
1 cucchiaio di porcini secchi
1 cucchiaino di alghe wakame disidratate
2 spicchi d’aglio
2 cucchiai di olio evo
1 ciuffo di prezzemolo
sale q.b.
pepe nero q.b.
Procedimento:
- Reidratate i porcini in acqua bollente e le wakame in acqua fredda.
- Scaldate l’olio in una padella, aggiungete l’aglio e fatelo dorate
- Aggiungete anche i funghi portobello e gli asparagi affettati. Insaporite con sale e fate saltare in padella 3 minuti
- Scolate i porcini e le wakame e aggiungeteli nella padella.
- Lasciate cuocere a fiamma media, mescolando di tanto in tanto, fino a che funghi e asparagi non saranno cotti. Dopo di che spegnete la fiamma.
- Fate bollire la fregola (o il riso ) in acqua salata. Dopo scolatela lasciando da parte un po’ di acqua di cottura.
- Aggiungete fregola e acqua in padella, riaccendete il fuoco e fate saltare 3 minuti.
- Insaporite con una spolverata di prezzemolo tritato e un pizzico di pepe nero
