Today I want to share this delicious recipe.
I had no dates so I used raisin to prepare these sticky toffee muffins. They were great! I hope you like it!
Ingredients for 8-9 muffins
150 gr raisin
100 ml soya milk
about 70 ml water
150 gr flour
1 tsp cinnamon
1/2 tsp nutmeg
1 small piece of fresh ginger (grated)
a pinch of salt
3 tbsp muscovado sugar
100 ml corn oil
2 tsp baking powder
for the toffee:
3 tbsp vegan fat spread
4-5 tbsp muscovado sugar
about 200 gr soya cream
Method:
- Preheat the oven to 180°C
- Put the raisin in a food processor with a bit of water (about 30 ml) and blend it.
- Put the mixture in a bowl and add sugar, oil, cinnamon, nutmeg and ginger. Stir a bit
- Sift the flour in and add soya milk and water. Whisk well until the dough is consistent. Add a pinch of salt, stir again and add the baking powder.
- Share the dough in the muffin cases. (I used some silicon cases so I didn’t oil them. If you use normal cases oil and dust them with flour before).
- Bake for about 20-25 minutes or until the toothpick comes out clean.
- In the meantime prepare the toffee. Put the fat spread in a small pot and let it melt on low heat, add the sugar and stir well until the sugar is melted too then add the soya cream.
- Stir continuously until the toffee is brown and ticker.
- Serve the muffins warm and pour some toffee cream on them.

Oggi voglio condividere con voi questa deliziosa ricetta.
Non avevo datteri per cui ho utilizzato l’uvetta per preparare questi buonissimi sticky toffee muffins. Spero vi piacciano.
Ingredienti per 8-9 muffins:
150 gr di uvetta
100 ml di latte di soia
circa 70 ml di acqua
150 gr di farina
3 cucchiai di zucchero muscovado
1 cucchiaino di cannella
1/2 cucchiaino di noce moscata
1 pezzettino di zenzero fresco (grattugiato)
1 pizzico di sale
100 ml di olio di mais
2 cucchiaini di lievito vegan (bicarbonato+cremor tartaro)
Per il toffee:
3 cucchiai di margarina vegan
4-5 cucchiai di zucchero muscovado
circa 200 gr di panna di soia.
Procedimento:
- Preriscaldate il forno a 180°C
- Tritate l’uvetta in un robot da cucina con un pochino di acqua (circa 30 ml)
- Mettete il composto in una ciotola e aggiungete zucchero, olio, cannella, zenzero e noce moscata. Mescolate bene.
- Setacciate la farina e aggiungete il latte di soia e l’acqua. Mescolate bene fino a che non otterrete un composto omogeneo. Aggiungete il pizzico di sale, mescolate ancora e incorporate il lievito.
- Dividete l’impasto nei pirottini per muffins (Io ne ho utilizzati alcuni di silicono e non li ho oliati precedentemente. Se utilizzate pirottini normali oliateli e infarinateli prima)
- Infornate per circa 20-25 minuti o fino a che lo stuzzicadenti verrà fuori pulito.
- Nel frattempo preparate il toffee. Mettete la margarina in un pentolino e fatela sciogliere a fiamma bassa, aggiungete lo zucchero e mescolate bene fino a che anche questo non si sarà sciolto. Aggiungete la panna di soia.
- Mescolate continuamente fino a che non otterrete un toffee bello dorato e un po’ denso.
- Servite i muffins tiepidi e ricoperti di toffee.
