Hello everyone!
Today I want to introduce to you another recipe from Sardinia: the Papassini!
These biscuits are a typical dish famous all around Sardinia, they are prepared mainly in November for “the day of the dead” ( 2 November) or during Christmas and Easter holidays.
This is the first time I prepared and veganize them but the result is absolutely amazing. I took inspiration from this ancient recipe that is without eggs. I love them and I think they are better than the original version, my son is agree with me. 😀 I hope you like them.
Ingredients ( for about 35 biscuits)
300 gr flour
100 gr vegan fat spread
100 gr cane sugar
80 ml no dairy milk
120 gr walnuts
50 gr almonds (I used ground almonds)
120-150 gr raisin
1 tbsp almond extract
1 orange zest
1 tsp baking powder
optional: anise flavour or anise liqueur to taste ( I didn’t use it because I don’t like anise)
For the glazing:
150 gr vegan icing sugar (pay attention because not all the labels are vegan, some contain egg powder )
1 1/2 tbsp of boiling water
optional: 1/2 lemon juice (about 2 tbsp)
sugar strands to taste
Method:
- Rehydrate the raisin in water for 30 minutes.
- Preheat the oven to 200 °C
- Sift the flour in a bowl and add the cane sugar and the vegan fat spread. Knead well with your hands until the dough is crumbly. (1)
- Drain the raisin and add it into the bowl. Add also the walnuts, the almonds,the almond extract, the baking powder and the orange zest. Knead again. (2)
- Pour the water, little by little, and continue to knead until the dough is compact and consistent. (3)
- Share the dough in four part and on a floured surface roll each part into a cylinder. (4)
- Press the cylinder with your hands until it is 1 cm thick. Cut the dough in pieces with a knife. (5)
- Put the biscuits on a baking tray lined with baking paper and bake for about 15 minutes (don’t worry if the biscuits are soft, they’ll become hard when cooled.
- Prepare the icing: sift the icing sugar in a bowl and add the boiling water (and the lemon juice if you want). Whisk well until you have a homogeneous mixture a bit sticky. (6)
- Dip a face of each biscuit in the icing and decorate it with sugar strands. Let it stand until the icing is hard
- Enjoy!

Oggi voglio presentarvi un’altra ricetta sarda: I papassini.
Questi biscotti sono un tipico piatto molto popolare in Sardegna, vengono preparati principalmente a Novembre ( per il giorno dei morti) o durante le festività natalizie o pasquali.
Questa è la prima volta che li ho fatti in casa e veganizzati ma il risultato è sorprendente. Secondo me sono anche più buoni della versione originale e anche il mio bimbo è d’accordo con me. Ho preso ispirazione da questa antica ricetta dove non vengono utilizzate le uova e poi l’ho veganizzata e personalizzata. Spero vi piacciano.
Ingredienti (per circa 35 biscotti)
300 gr di farina
100 gr di margarina vegan
100 gr di zucchero di canna
120 gr di noci
50 gr di mandorle (io ho usato mandorle tritate)
1 cucchiaio di estratto di mandorla
120-150 gr di uva passa
la scorza di un’arancia
1 cucchiaino di lievito vegan (cremor tartaro + bicarbonato)
80 ml di latte vegetale
optional: estratto di anice o liquore all’anice a piacere ( Io non l’ho usato perchè non mi piace l’anice)
per la glassa:
150 gr di zucchero a velo vegan (attenzione che non tutte le marche di zucchero a velo sono vegane, alcune contengono uovo)
1 cucchiaio e 1/2 di acqua bollente.
optional: succo di 1/2 limone (2 cucchiai circa)
zuccherini a piacere
Procedimento:
- Ammollate l’uvetta in acqua per 30 minuti
- Preriscaldate il forno a 200°C
- Setacciate la farina in una ciotola e aggiungete lo zucchero e la margarina. Impastate bene fino a che l’impasto risulterà sbricioloso. (1)
- Scolate l’uvetta e aggiungetela all’impasto. Aggiungete anche le noci, le mandorle, l’estratto di mandorle, l’estratto di mandorle, il lievito e la scorza di arancio. Impastate ancora. (2)
- Versate l’acqua poco per volta continuando a impastare bene fino a che non otterrete un impasto omogeneo e compatto. (3)
- Dividete l’impasto in 4 parti e arrotolate ogni parte a formare un cilindro, su una superficie infarinata. (4)
- Pressate il cilindro con le mani fino a che non avrà lo spessore di 1 cm, dopo di che tagliatelo in tanti pezzi con un coltello. (5)
- Disponete i biscotti su una teglia rivestita di carta forno e infornate per 15 minuti (non preoccupatevi se i biscotti saranno ancora morbidi, si induriranno una volta freddi)
- Preparate la glassa: setacciate lo zucchero a velo in una ciotola e aggiungete il succo di limone e l’acqua bollente. Mescolate bene con una frusta fino a che non otterrete un composto omogeneo, liscio e un po’ colloso. (6)
- Intingete una faccia di ogni biscotto nella glassa e decoratela con gli zuccherini. Lasciate riposare fino a che la glassa non sarà indurita.
