Hello everyone! This is one of my grandmother’s recipe. Unfortunately she couldn’t teach how to prepare it because she died when I was very young but my mother told to me that she often cooked runner beans in this way, so I want to try to prepare it by myself. I hope you like it!
Ciao a tutti! Questa è una delle ricette di mia nonna. Sfortunatamente non ha potuto insegnarmi come prepararla perchè è morta quando ero molto molto piccola ma mia madre mi ha raccontato che la preparava spesso e così ci ho provato pure io e l’ho fatta a modo mio. Spero vi piaccia!
Ingredients / Ingredienti:
1 onion / 1 cipolla
2 tbsp extra virgin olive oil / 2 cucchiai di olio evo
6-7 potatoes / 6-7 patate
10-15 runner beans / 10- 15 fagiolini piattoni
1 can of chopped tomatoes / 1 barattolo di pomodori a pezzi
1 sprig of rosemary / 1 rametto di rosmarino
salt to taste / sale q.b.
2-3 glasses of water / 2-3 bicchieri di acqua.
Method:
- Clean the runner beans cutting the ends and cut them in pieces / Pulite i fagiolini eliminando le estremità e tagliateli a pezzi.
- Peel the potatoes and cube them / Pelate le patate e tagliatele a cubetti
- Heat the oil in a saucepan and add the sliced onion. Let it cook until golden brown / Scaldate l’olio in una pentola e aggiungete la cipolla affettata- Lasciate cuocere fino a che non sarà dorata.
- Add the potatoes and the runner beans. Let cook for 5 minutes stirring sometimes. / Aggiungete le patate e i fagiolini e lasciate cuocere per 5 minuti mescolando di tanto in tanto.
- Add the chopped tomatoes and the water and flavour with salt and rosemary / Aggiungete i pomodori a pezzi e l’acqua e insaporite con sale e rosmarino
- Cover the saucepan with the lid and let cook on low medium heat, stirring sometimes, until the potatoes are soft and the liquid becomes a sauce. / Coprite la pentola col coperchio e lasciate cuocere a fiamma medio bassa, mescolando di tanto in tanto, fino a che le patate saranno morbidi e il liquido si sarà ristretto in un sughetto.
- Let it cool a bit before serving / Lasciate raffreddare un po’ prima di servire

Anche noi facciamo questo abbinamento tra fagiolini e patate. Mia nonna era siciliana e li faceva in insalata senza pomodoro ma ci metteva a volte anche la cipolla. È buonissima!
