Italian dishes Italians dont’ know

Since I moved to England I have seen a lot of dishes pass off as Italian, which don’t exist in Italy.

This amused me every time.

This is my list:

  1. Canned “Italian” ravioli or spaghetti. Nobody eat canned pasta in Italy. The first time I saw these in the supermarket I was shocked 😀
  2. Spaghetti with meatballs. The only time I saw it in Italy is when I was a child and I saw Lady and the trump.
  3. Fettuccine Alfredo. Who is Alfredo? 😀 I have never eaten fettuccine Alfredo. I have no idea about its taste or ingredients.
  4. Pizza or pasta with chicken. In Italy people eat chicken as main course, after pasta, not with pasta.
  5. Garlic Bread. In Italy we have the bruschetta: toasted slice of bread flavoured with extra virgin olive oil and garlic or/and chopped fresh tomatoes and basil but it isn’t the same. Garlic bread is too much “buttery”, bruschetta is “light”.
  6. Carbonara with everything but egg. The real carbonara is made with eggs, cheek lard and pecorino romano but somebody makes it with bacon, eggs and parmesan cheese. Someone else add some double cream. But carborara without eggs is not carbonara in Italy.
  7. Potato gnocchi in Italy is always set in the refrigerator aisle with fresh pasta.
  8. Pepperoni. In Italy if I ask for pepperoni I’ll definitely have some bell peppers (peperoni in Italian). Pepperoni is spicy Salame. Salame not Salami 😀
  9. In Italy we have cappuccino for breakfast not after lunch or in the afternoon.
  10. Coffee in Italy is short and strong. I have never had a coffee outside my home since I was here. 😀

Cocoa biscuits Grisbì style with lemon or chocolate custard cream filling- Biscotti al cacao stile Grisbì con ripieno di crema pasticcera al limone o cioccolato

Yesterday I saw on facebook the recipe to prepare home made grisbì biscuits. It is not vegan.

What’s the problem? I can make it vegan!!!

Ingredients:

250 gr plain flour

150 gr cane sugar

60 gr vegan fat spread

60 gr corn oil

1 pinch of salt

1 tsp of baking powder

50 gr ground almond

40 gr cocoa powder

40 gr water

For the lemon filling:

400 ml soya milk

4 tbsp flour

5 tbsp cane sugar

1/2 lemon zest

For the chocolate filling:

100 gr dark chocolate

4 tbsp lemon custard.

Method:

1) prepare the dough:

  1. Sift the flour in a bowl, add all the other ingredients, one by one, and mix well with your hands until you have a homogeneous and compact dough. Roll it up in the plastic wrap and let it stand for 30 minutes in the fridge.

2) Prepare the custard:

  1. Sift the flour in a saucepan, add the sugar and the lemon zest and mix well. Pour the soya milk little by little stirring well. Place the saucepan on the stove to low-medium heat and cook until it thickens. Stir continuously.
  2. Melt the chocolate in bain-marie or in the microwave, add 4 tbsp of lemon custard and mix well.

3) Make the biscuits:

  1. Preheat the oven to 180°C
  2. Divide the dough in four parts. Roll out each part on a surface dusted with flour. With a biscuit cutter cut the biscuits. Put 1 tsp of cream (lemon or chocolate) in the middle of one shape and cover with another shape pressing firmly with your finger all around to close well. Place the biscuits on a tray covered with baking paper.
  3. Bake for 8-10 minutes.
  4. Enjoy!!!

Ciao a tutti!

Ieri sera su facebook ho visto la ricetta dei grisbì fatti in casa. Non erano vegani.

Che problema c’è? Li veganizzo io!!!

Ingredienti:

250 gr di farina 0

150 gr di zucchero di canna

60 gr di margarina vegan o burro all’olio

60 gr di olio di semi di mais

40 gr di cacao in polvere

1 pizzico di sale

1 cucchiaino di lievito

40 gr di acqua

50 gr di mandorle tritate finissime

per il ripieno al limone:

400 ml di latte di soia

4 cucchiai di farina

5 cucchiai di zucchero di canna

la scorza di mezzo limone

Per il ripieno al cioccolato:

100 gr di cioccolato fondente

4 cucchiai di crema al limone

Procedimento:

1) preparare la base:

  1. Setacciare la farina in una ciotola, aggiungere, uno per volta, tutti gli altri ingredienti e mescolare bene con le mani fino ad ottenere un impasto compatto e omogeneo. Avvolgerlo nella pellicola e lasciarlo riposare 30 minuti in frigo

2) preparare la crema:

  1. setacciare la farina in un pentolino, aggiungere lo zucchero e la scorza di limone, versare il latte a filo mescolando bene con una frusta. Mettere il pentolino sul fuoco a fiamma medio bassa e cuocere finchè non si addensa, mescolando continuamente.
  2. Sciogliere il cioccolato fondente a bagno maria o al microonde. Aggiungere 4 cucchiai di crema al limone e mescolare bene

3) preparare i biscotti:

  1. Preriscaldare il forno a 180°
  2. Dividere l’impasto in 4 parti, stendere ogni parte su una superficie infarinata e con uno stampo per biscotti tagliare delle forme uguali. Posizionare un cucchiaino di crema al centro di una forma e ricoprire con un un’altra forma, premendo bene con le dita sui lati per sigillarlo. Adagiare i biscotti su una teglia rivestita di carta forno
  3. Infornare per circa 8-10 minuti
  4. Buon appetito!!!
